In the Netherlands, approximately 150,000 tons of bread is returned each year. This bread is not suitable to eat. An application of this bread in the food chain would make an important contribution to a circular chain. One solution is to convert the bread into a saccharified bread paste and use it as a sugar substitute in ice cream. In this project University of Applied Sciences VHL, an ice company, bakery ingredients supplier and waste stream collector are working together to develop a robust (logistic) process to make saccharified bread paste and to apply in various ice creams.
